Now it's time to bake. Bake that loin til it's at least 145F. That's the temp that pork is safe to eat at.

t should be a nice pink color and if you take it out a degree or two before it's done, that's okay because the pork will continue to cook a little after it's out of the oven. You want to rest your pork for at least 5 minutes, tented with foil, before you eat it.
