I'm balkan. You know what we do? A pig's head on a mound of vegetables. Carrots, potatoes, eggplants, onions, parsnips, turnips, etc. All baked in a woodfire oven. Why? Because all that delicious fat from the pig head will drizzle out over the vegetables. You get your tasty pig meat off the face, like the cheeks, the tongue, the brain if that's your jam, and deliciously seasoned vegetables. Potatoes in lard are amazing.
Better than an animal head sitting there giving NOTHING to the potatoes you have in a separate bowl.
