Sometimes my mom would make a chicken casserole. It wasn't anything special. Probably wouldn't be that tasty if I tried it today. It was just a casserole pan with a bed of salted white rice, some shredded rotisserie chicken, and pieces of cheddar cheese sprinkled across the top. Then she'd bake it and fix me and my siblings plates once the cheese melted. She wasn't really around much so I really loved eating meals like that with her.
