Actually, whether my batches are big or small, I use a logging system that I created in Excel to track outcomes for all breads.

The Bread Baker's Apprentice is a great book. One of my favorites is Pain a l'Ancienne. Makes a wicked loaf and a wicked pizza dough. One of the first high hydration doughs I ever tried making at home.
