The vast majority of iron is absorbed in the small intestine.
You can have your entire large intestine including the colon removed and will still absorb most nutrients the same as before proctocolectomy. The colon mostly just takes in some remaining water and electrolytes.
Someone with Crohn's who has very low iron would get that way because of inflammation in the small intestine, higher up in the GI tract.
