I want to make some truly exsquisite, creamy mac and cheese.
I'm not talking about southern-style baked mac with eggs and velveeta here.

From my research, there seem to be two simple factors that when gotten right, will result in mac and cheese perfection:
1) Bechamel sauce
2) Choice of cheeses

I am posting this thread to gather advice on how to perfect these two simple factors in order to make the best mac and cheese possible.

I like mixing sauces into pre-made mac and cheese, like BBQ sauce or like I did tonight, green taco sauce.
Anyone else do this? Or am I just weird and think just cheese sauce tends to be boring taste-wise?

These terms were invented in the last 10 years in order to "destigmatize" people with the palate of a toddler, with the medical establishment's consensus now being that we should just let these annoying retards eat chips every day until they die at 40.

How the hell do you make good mac & cheese
the recipes that have you make a rue with flour and butter always come out too gritty and that one where you cook all the water off and throw in cream either gets burnt or comes out to thick or thin

Doesn't matter how much love I put into it, what quality inredients I use, how much effort I put in this food, it always comes out like a slop. I vote mac and cheese as one of the most overrated meals I ever tasted. It feels like a better food that they feed prebuscent kids or seniors past their expiry date in a nursing house.

Can't even compare with based grilled cheese sandwich.

my punk ass younger siblings love macaroni but we almost never have heavy cream in the house so i have to make it the roux/milk way instead of just fat cream and cheese. it always out grainy when i make it with roux. any way to make the sauce more silky when making it w flour/butter? hate how boxed macn cheese tastes
