For veg dishes, Indians know what's up. Try aloo matar, it's pretty easy to make. Curried potatoes and peas with a tomato and onion base.

Most Indian curries are pretty cheap to make, I make pic related a couple times a month. Just potatoes, onions, peas, tomato and spices, works out to a little over $1 per serving. Around here at least, those whole roasted chickens at the grocery deli are like $7 and you can easily make 2-3 meals out of that. Chicken with mashed or baked potato one day, chicken tinga tacos the next. Soup if you've still got leftovers.
