I was torn between making these and making mini quiches when I read that I had to make some kind of frosting. Since the cheesecakes have no crust, I mixed it up a little bit and put the graham cracker flavor and texture associated with a classic NY cheesecake into a standard buttercream frosting. It came out great, slightly gritty with a hint of crunch.
