Most of them have a small amount of vinegar in them, not necessary as a flavor base such as Tabasco or Crystal, but say Melinda's. Maybe a little bit of salt too.

They're used more as a preservative in that case.

For the best overall with a vinegar base, Tabasco. They got it right for that type of hot sauce.

Pic related is a great one too, but vinegar isn't its base, carrots are its base.
