I used to try to do pour-overs, but it never came out right. It's like it gets clogged. I've tried multiple grind settings on my Baratza Encore but it seems to happen. I've tried multiple techniques, including that one where you stir it with a spoon. It still gets clogged a lot. If this happens, it invariably winds up undrinkably bitter.
What am I probably doing wrong?
