The only 'mechanized cruelty' that takes place in the West is for Kosher and Halal food. Everyone normal eats cows that were happy until the moment they died.

Cows have an easy, happy life and they wouldn't exist if we didn't eat steaks.

Here is how I do it.
>put all my frozen bones (leftover, don't go buy bones for this) in a pot, cover with water.
>bring to just under simmer for 20 hours
>add veggie scraps
>simmer 4 more hours

If you simmer veggie scraps for too long, the flavor will be gone. If you don't under-simmer them enough, you don't get anything out of them.

Avoid cruciferous vegetables, it'll be good but it will stink like bad cabbage stew.

I don't season my stock, I season when I use it. Again, useless to season it beforehand.

The bones should crumble between the fingers. Make sure to use your bones in a compost or give them to a friend, they are basically Bone Meal which is great fertilizer and expensive.
