>My homegrown peppers are almost done fermenting (pic is not mine, but similar) for a hot sauce. However, I want to take as much water out as possible to get a more concentrated flavor and heat. What is the best way to do this?
>I'm inclined to just boil it off, but a quick google search has yielded numerous people saying that boiling vinegar is not only bad for the pot, but can mess with the flavor of the hot sauce.
