I made Briam once, also known as the "greek ratatouille". Pretty simple to make - a bottom layer of tomatoes, then a layer of sliced red onion, zucchini and eggplant, then another top layer of tomato, all with generous amounts of olive oil. Greek guy I know online said it looked pretty good, only with not nearly enough oil to be authentic.

The bottom line: olive oil is the single most important element of Greek cuisine.

Dinner tonight: Briam (pretty much the Greek variant of Ratatouille)

Diced tomato, 2 layers, on bottom and on top
in between is gold potato, zucchini, eggplant, and red onion
seasoned with olive oil, garlic, rosemary, oregano and parsley
