/ck/, I went and bought alembic; and now I wonder what kind of malt should I use for wort, and how strong wort should be. I brewed loads of different beers before; I am fully capable of making 15% wheat wine and other crazy stuff. I don't want to make peated whisky yet; I just want to make easy, normal stuff. Pale Ale malt should be good enough, right? Should I throw in small amount of Honey malt or similar slightly baked malt? 3,5-4 liters of water per 1 kg of malt?
