Stainless-lined copper isn't THAT bad, people overstate the impact of the stainless lining and act like it's worse than multi-ply.

Tin is a bit better, but as someone who owns plenty of both, I'll take the stainless stuff over tin, retinning shit gets annoying, and can be expensive for larger pieces.

It's just a ceramic coating that might have some copper dust thrown into it for coloring and so they can say they use REAL copper.

Actual copper is shiny and metallic and should look/feel/sound like it.

Nah, re-tinning isn't TOO bad unless you're dealing with a BIG pot or something.

I spent less than $400 to refurbish this stock pot

To buy something new this size would be like 2x that.

I use my largest stockpot for canning

generally, I just don't need to use my largest though, I've got some nice mid-large-sized pots that aren't MASSIVE but are much higher quality.

just depends on the configuration of the stove.

Looks like on that, you'd want to use the back right since it appears to be the power burner, great for boiling water quickly or cooking an over-filled pan for the entire family.

My wolf range however has 3 of the 4 burners being power burners, so all except the back left can output the same exact BTU.

Given the choice, gas is always what i'd go with.

That being said, a good induction top isn't BAD, I just find gas to be a much more intuitive heat to cook with. Especially for delicate temp control.

Usually fairly expensive while only providing minimal thermal advantage over 5-ply stainless steel.

That being said, I still have a copper frying pan, and a copper sauce pot, as well as some copper mixing bowls for whipping egg whites.

Also as >>14394067 says, bare copper is toxic, and unlined pans aren't usable except in the case of mixing bowls for egg whites and candy making pots.
