Any good secret sauce recipes /ck/? I'm planning on slow cooking some pork ribs in my Dutch oven and need a sauce, preferably a slightly spicy one, to cover them in. I usually finish my ribs off under the broiler to really crisp up the outer layer of sauce too.

>2 Teflon pans
Big teflon is working hard today.
If there is one pan you absolutely do not need 2 of, its teflon
>4-5 quart pot with lid and strainer/steamer
A metal colander will do just fine for all your steaming
>roasting pan
For all the large roasts you will do over the course of a year just buy an aluminum pan for a dollar and toss it when you're done
>aluminum tray
Not even sure what this refers to. Fuck this guy.

I worked at a Hardee's about a year and a half ago. Closing shift. Just me and an asst. manager most days. He was a chill dude, and honestly I can't think of a time that frustrated me where we got a burger near close; the real killer was the chicken tenders, since the franchise owner usually wanted the breading transferred and sifted before close, so that'd really bust our timetables since we gotta get the chicken out, milk n bread it, and fry for 3:33 (which eats up a considerable amount of our <5min window times)

But a burger? You just throw it and the buns through the grillers, slap shit together and box it. Of course if some nigger comes by wanting double-digits of anything, that's a pain.

See when people say shit like this it becomes clear that they have either never worked in a food joint or have been blessed; even restaurants do pre-close and will restrict their options as it comes closer to time, to where ideally all that is left to be done is to wipe everything down, sweep, and lock up. Business expects you out the door <15min after actual closing of the facility, ideally <10. You tell me you and one dude can clean up and take down a whole joint by then with no pre-close and I will tell you you're full of shit.
