Chipotle is my favorite Tabasco, with habanero as a close second depending on the context. Scorpion is good too, but mainly for mixing with other condiments to make a spicy sauce for dipping or putting on sandwiches, etc. Classic Tabasco is a great concoction on its own, but its problem is that the complexity is lost when you actually add it to something. People hate on Tabasco as being just "spicy vinegar." While it is true in principle, it's selling it short. Tabasco is an AGED spicy vinegar, and if you actually taste Tabasco on its own with a decent pallete then you will notice a pronounced flavor imparted by the aging in oak barrels. The problem is that once you actually add Tabasco to something the complexity is diluted making less of a difference compared to much cheaper "spicy vinegar" style sauces like Crystal.

Yes, Crystal is the most versatile hot sauce. Just here to say that Tabasco Chipotle is fucking delicious and makes everything taste better. Isn't really hot though.
