don't you have a sushi shop or thai zone around? even small towns have chinese massage parlours now, so i figure the thai/viet/chinese hole in the wall are coming.

seriously, even when I lived in Sherbrooke, i found the food options a little disapointing coming from cote-des-neiges in montreal. at least it was affordable.
i agree with you that there is a hole to be filled.
thinking of it, opening an haitian casse croute in these parts could be a nice idea.
they serve roast chicken which is a must in quebec and the flavours are pretty good on a january night. also porc in regions is pretty cheap and the flavours are not too different from quebec food.

back in 2003, I biked tour Cuba with a friend. the best thing we had in villages was lechon sandies. it was a roast pork slider sandwich with a lime sauce, served with a glass of fress goyave juice. it was delicious.
