okay, listen. If your meat is good enough to be served medium well, and you want it medium well, then why grind it?
We can set aside the matter of hygiene, because if the meat is not freshly ground then and there shortly before they prepare this, then you might as well wipe our ass with that before eating. If you would not dare eating their ground meat raw (culinary preference aside), then you would have to be retarded to eat this.
Back on topic, why medium? This is not a steak. Heck, classic German Hamburg Steak is not even pure beef necessarily, of course it's well done.
