I made them last night for the first time on a whim and I was blown away at the ease to tasty scale. If you have salt onions and vinegar I highly recommend. Whole thing took me less than 25 minutes and I'll never have a fridge without them now.

I sliced 1 red onion thinly, filled two 14 oz jars with half an onion and 2 cloves of garlic each. Measured each jar halfway with water, doubled the water volume with white vinegar then added 3% salt of the liquid weight. I added half a dash of apple cider vinegar to one jar. Brought the salt/liquid mixture to a low boil then added back to jars and left until cooled. Super excited to mess around with sugar and more aromatics in future batches.

Made a jar of pickled red onions today and it tastes as horrendous as it smells. I think it might be because I used malt vinegar (distilled). Would regular white or red vinegar have yielded a more palatable taste?

I haven't actually tried pickled onions before so for all I know this is what they taste like. I find that unlikely though, given how tasty I find pickled gherkins.
