From what my grandma told me kepping milk without refrigerators wasn't a thing; you would boil fresh milk and consume it next couple of days and then go to a farmer to refill. Usually it was processed in yogurt (gets you a few more days) and especially cheese, also butter and that could last if kept in cold water/room
