I feel like baking has a higher skill floor but cooking has a higher skill ceiling.
if you fuck up the recipe while baking, well there you go, you fucked up the recipe. There's a good chance what you made will barely be edible, and you better be more precise with the ingredients and practice your techniques for the next time
but while cooking, you can taste as you go and adjust to avoid your disaster turning into a disaster. This makes it easier to avoid fucking up big time but requires some extra skills to figure out what's missing or what there is too much of, what ingredients to add in to remedy it, in what quantity, when to add them in...
