Rice is great because you can cook other stuff while it is cooking. I've been using 10 minute soak, 15 minutes cook, 15 minutes rest time so that gives me 40 minutes to cook everything else.

Some ideas:

Asian green vegetables (e.g. bok choi). I fry them in a small amount of hot oil, hot enough for a sizzle sound, then add a small amount of water and continue cooking on a lower temperature. This method removes the bitterness through the high heat phase while not overcooking them. Pic is this plus unagi over rice.

Asian style omelette. Like Western omelette but with more oil and higher temperature. You are going for more caramelization of the egg so it has a stronger taste to go with the bland rice.

Roast chicken leg. I haven't done this yet but roasting with some kind of soy sauce based marinade would be good with rice.

I also make a lot of nigiri sushi, which is also fast since you prepare the fish while the rice is cooking and then it's about 10 minutes to make the nigiri. But it takes extra time to let the rice cool.

These are the Asian style dishes I like. I also have rice based dishes like rice and beans but they are very different and more involved to make.

Just made some unagi over rice, with some vegetable from the Japanese store called komatsuma.

I did the komatsuma the same way I do all Asian greens and they turned out good. The unagi wasn't great.
