Now we're talking, this is the actual overrated take. Kimchi is a gift from god and they've perfected it, but the rest of their staple ingredients are just as basic as Japanese, but with gochujang/garu (especially compared to the CN). They're overrated because they went heavily into tech places in CA as well as LA so two of the most concentrated places of social media whoring suddenly exploded with Korean food. Now the 3rd gen diaspora are desperate to prove their yellowness and will not shut up about how Korean food is the peak of cuisine. You even see Koreans actually rave about how peak spicy the food is when the average max is like a 3 on a Sz scale and a 1 on Vietnamese/Thai. K-pop makes turbo weebs of their own, but Korean food hype is pushed by return to roots Korean American kids and westcoast normalfags as well making it truly overrated.
Japanese food is just overhyped by weebs alone. Thank you for reading my thesis paper.

The fries are very good if they're fresh. Old Filipino guy at work taught me that the trick is to order them without salt since you have diabetes or something. They do accommodate this and will make a fresh batch. When you get to the window, ask for some salt packets. I do this every time and they don't mind and it's perfectly reasonable to assume that I can't eat salt but I'm sharing them with someone who can.
Also does anyone have a screen shot of when google used to say Asuka when searching "who is best girl in evangelion?"

I think it's much more because of the face Mexican food doesn't have the same kind of "high cuisine" that French, Italian, and Japanese have - where there's a culture of aristocracy surrounding and constantly advancing it. It also doesn't have super specialized cuisines like Indian or regional Chinese except for maybe Oaxaca. It has everything you could ask for, does it cheaply, and it's super difficult to improve. It's food made by mothers and cooks with love and comfort being the main ingredients. It also has a weird thing where if you went to a super fancy Mexican place, it ends up not hitting the right spots because they try to "improve" something already balanced like making mole with red wine or something - this always ends up being less 'Mexican food' than a bargain taqueria. Because Mexican food is so balanced, cheap, and tasty, improving it turns it into either something shitty or something that has lost it's Mexican identity. Like that scene at the end of Ratertoolie where the harsh critique writes the best review because they made something timeless, simple, and nostalgic. Mexican is that, but applied to an entire cuisine.

I guess one advantage of cast iron is that you CAN'T bother with that shit, while stainless allows you to waste your fleeting time on this earth "polishing" it. But it's unfair to blame the pan for one's own compulsions, when it will work just as well without any of that autism.
