Someone told me once that France is a very regional country and that "French cuisine restaurant" are like tourist "trap", that every region have it's own culture, local product (terroir) and cuisine.
Isn't it better to roam a country and eat in comfy regional restaurant ? What is the best region for food in France ? How is the north compared to the south ?
