Florida is more fish than anything, although key lime pie is a prominent desert almost everywhere. If anything I'd say grouper is more of a thing down here, actually nearly every state that borders the gulf of mexico likely pulls a lot of grouper.

I use soft boards, you burn through them pretty quickly with regular use but they don't fuck up the edge of your knife, so you get to hone and stone less frequently.

It's just my opinion which I formulated having grown up in New York and traveling to Mexico 5 times. I'm sure you have a much more insightful opinion.

Also the Mexican restaurants in the U.S. getting stars is literally Tex Mex. Show me a goat stew (traditional Mexican dish) on any of their menus and I'll sage and report myself.
