I'm kind of baffled about what actual Chinese food might be like

I know the shit that they serve in America is bsaically the McDonalds version, if even that. But whenever I hear about "authentic" Chinese food it's always shit like shark fin soup or bowls full of random vegetables and rice. Makes me wonder if American Chinese food being shit is just some bullshit perpetrated by food snobs, like how people say authentic Italian pizza is the best kind
