You cook them on the vine, its convenient and makes good presentation, they stay together on a grill that way instead of rolling around. You can't remove the vine post cooking because the tomatoes will just burst and their juice squirts everywhere which would kill the presentation, but not a problem for the consumer eating the dish to remove themselves.
I do the same when I cook a breakfast.
