Pork loin roulade. Spinach, toasted pine nuts, dried cherries, sauteed onion and cream cheese. I threw about 2/3 cup of panko in there to soak up some of the spinach water I didn't wring free.
Served with herb roasted small red potatoes and carrots.
Next time I will try to remember lemon or maybe do something like make a onion, fig and garlic jam instead of making a stuffing and having less presentation with bigger flavor.
