mexican food is overrated in the sense that it is pure poverty food and much of its "renown" in the states is because mexican immigrants are the largest non-white diaspora and so saying you love mexican food (taco trucks in every street corner) is an easy way to signal you're not an evul nahtzee who wants a border wall

there's a reason why there's so little mexican food in places like europe, east asia, and canada, whereas cuisine from india/japan/france are much more wide ranging and universally popular
