French 75, gin version is best but brandy will do if he doesn't like gin.

2oz liquor
1/2oz lemon juice
1/4oz 2-to-1 simple syrup

Shake with ice, strain into a coupe or flute, top up with dry sparkling wine.

If you're feeling flush, sub out 1oz of liquor for 1oz of St. Germaine.

French 75

2oz gin
1/2oz simple syrup
1/2oz lemon juice
shake with ice

Strain into glass, top up with sparkling white wine and add a twist of lemon

Alternatively I love a good gimlet
