Reindeer loin, steak, and backstraps.
This you should be able to get in both Finland amd Sweden and maybe Norway.

Blodpalt.
This is a Swedish dish made with potato, onion, allspice, pork blood, and fatty pork. It's served with molten butter and lingonberries, typically.

Mårten Gås dinner.
Several dishes made with different parts of a goose. Swedish southern traditional festive meal.

Jansson's temptation.
A classic Swedish late-night and/or drinking food, and/or christmas dish.
Julienned potatoes, creamed in the oven with anchovies, plenty of onion, some breadcrumb and cream.

Gravlax.
Cured fresh salmon using salt, sugar and herbs (usually dill and/or parsley).

Cream of Sweetbreads and morel soup.
A swedish/norwegian/danish dish, perfect as a starter or a main. Very cozy and comforting - any dish with sweethreads is going to be a pain preparing though. Getting all that membrane out without wasting all the food is rough.

Beetroot salad
Similar to a mayo based potato salad, you use pickled beets, equal parts may and sourcream, some white pepper, some salt, some powdered onion, and a small dash of a liquor you enjoy ( I like brandy/cognac/armagnac).
