>2 cups/1 pint heavy cream
they sell 1 pint containers so it's convenient, or you can just get a big boy carton
>5 egg yolks
>1/2 cup granulated white sugar
>1 vanilla bean, or 1 tsp vanilla extract
>a pinch of salt

Preheat oven to 325 degrees. Add the cream to a saucepan. If using vanilla bean, split, scrape, and put it in with the heavy cream. Heat until hot, then add your vanilla extract (if using). Remove the vanilla bean pods (if using).

While the cream is heating, or when it just finishes, you want to boil some water. You also want to bear the 1/2 a cup of sugar into the 5 egg yolks. Make sure it's well combined and light.

Slowly steam about half of the hot cream into the egg yolks, stirring constantly. Then pour the egg mixture into the cream, stirring constantly. These steps are crucial, as you do not want the eggs to curdle. Then, pour the whole thing into four 6 ounce ramekins and place in a baking dish. Fill the dish with boiling water until the water level reaches about halfway up the sides of the ramekins.

Bake it for 30ish minutes until the center is just set. When you tilt the ramekin, the center should move but not break. It should have a kind of jello like movement in the center. Allow it to cool to room temp, then set in the fridge overnight, up to a few days. When ready to eat, take it out, sprinkle some sugar on top, then use any method you like to caramelize. I have a torch, but apparently you can just get a spoon hot using a stovetop and gently touch the spoon to the sugar. Or you can use a broiler.

It is a lot easier than it sounds desu, and it's good because it can be made in advance.
