What I like in German cuisine is mett. Few other countries in the world have standards high enough to allow for eating raw pork. America certainly doesn't.

Mett is eaten raw. Its minced pork often eaten with chopped onions or onions in rings.

The meat is slaughtered on the same day as the mett is prepared as mett will go bad 1 day later.
