I want to use leftover pho broth. Noodles are easy to get, what kind of meat can I get from the supermarket to put in it?

Pho is French beef broth
Bho Kho is French beef stew
Bhan xheo is French crepe.
Bhan mi is French baguette.

I thought my mom was joking when she commented that Vietnamese cuisine doesn't exist.
I've always considered fusion cooking as a meme and now my entire life is a lie.

I think people just have an incompetent taste buds. A lot of things people like I don't. But guess what's good though? Pho and whatever noodles exist out there.

Pho’s flavor pretty much 50% comes from MSG crystals right? If you follow any of these cucktubers recipes, none of their broths ever come close to tasting like restaurant pho because none of them tell you to add msg. It’s strange because they’re ok with using msg for other stuff, yet they all seem to avoid adding it to pho then acting like what they made is delicious. If you follow their recipes, you just get some extremely bland beef herbal soup with no umami.
It seems like beef bones just don’t offer enough umami like pork and chicken bones, so pho more than other noodle soups rely much more on adding msg to it.
Any Vietnamese have any insight on what really makes pho taste like restaurant quality?

I've often felt like I'd love to have a portable Pho shop. I could hire a few little Vietnamese grandmas to make me a giant pot of broth the night before, swing by in my truck and pick it up and pay them and see them the next morning for a fresh batch.

I'd keep it piping hot and offer a discount for any customer that brought their own bowl. (Less cost and cleanup for me.)

I'd call the truck/company, "Vietnomnomnom".

Its good. but not great like /ck/ made it out to be. 7/10 the hoisin sauce adds to the flavor

Why is this gook shit so fucking good? It's just noodles and meat in broth. What's the secret? Is it the herbs? I want to start making this myself, but I know nothing about Vietnamese food.

In both Berlin and France, the top rated asian restaurants on Tripadvisor are Vietnamese. And I've tried them both.
Did it taste good? Sure. But was it spectacular and worth the reputation? Not really.
Their dishes consists of either a few variants of Pho, deep fried stuff, skewered dishes, and some obviously chinese dishes with some extra green garnish. So in general, I think its selection of food is quite limited and not exactly a world class cuisine. Whereas Chinese, Thai and Indonesian offers so much more.
I don't really see how Vietnamese could be represented as much as it is. I've had beef shank soup in Philippines that has tasted just as good as Pho, and there are Chinese restaurants in Berlin that just offers more food that also happens to taste better.

What caused Vietnamese cuisine to become such a big thing?

is it rude to ask for things that aren't on the menu?

for example my favorite meal to eat out is pho with an order of vegetarian salad rolls on the side

i don't eat seafood or pork so if that's all that's on the menu i just ask if they can make ones with whatever vegetables or tofu instead

they always do it, and if they refused i would just never eat there again

in return they get to make more money by charging me for meat and serving vegetables and i'm a happy customer
