anon you don't put garlic in light broth soup, especially not a soup that's mostly root vegetables.

bay leaf, rosemary, marjoram, even tarragon. a shake of sage is good but just a teeny pinch. none of these things will replace salt so you'll still need that. as anons have suggested, bouillon cubes really add a lot, half strength if you're avoiding salt
