There's only one reason to be on these diets in a first world country which doesn't suffer from food shortages: a legitimate medical like a meat allergy.

Veganism has a moral factor too (doing less harm to animals and the environment), but most of them are also posting about veganism on instagram/twitter from their slave labor created cell phones and aren't exactly living "off the grid" in a sustainable way, so it's just virtue signaling.
