Lamb was big in AUS/NZ because of wool production for export. That was never something that existed in the US historically, which meant lamb was simply less common than other meats. Throw in that most of the lamb baby boomers did eat was frozen shit sent up from NZ from wool-first breeds (breeds that make better wool usually have less meat that's chewier and also far more pungent) and an entire generation grew up with lamb as that weird thing they almost never ate and when they did they didn't like it.

Once something like that is entrenched in a population it can be hard to change it, though meat-first Australian lamb shipped fresh in cryo and selling for less than the wool first, frozen NZ junk along with the whole local artisanal blah-shittery movement meaning some butchers are pushing local lamb now is starting to change it a little.

Also, lamb is cheaper to produce than beef. The only reason it costs so much more in the US is sellers have to cover for wastage if they want to carry it at all.

I know that feel. Have a great green grocer near my house with awesome quality for like 50% less than the local supermarket. Get my meat from a butcher. Get my staples from a bulk place. So all that's left is the occasional crap food run from the local supermarket and half the time the cashiers give odd looks and I always feel like I should explain that the gummies, ice cream, and chips is two weeks of snacks and not one night's fucking dinner.

At the age of 10, I lived with my family in the Fisher Housing Projects in Detroit, Michigan. By today’s standards we were considered poor.

On my way home from school one day, I took a different route through the neighborhood. I came across a fenced-in-yard that had a small peach tree standing in the middle. I could see through the wire fence that there were 15 large peaches hanging from the tree and 2 were even lying on the ground.

I stood there admiring those peaches for some time. I began to think how good one would taste and that the 2 on the ground would rot for sure, if they stayed there. So, to keep the ones on the ground from rotting, I climbed over the fence, sat down under the tree and enjoyed the sweetest, juiciest peaches I ever ate in my life.

We only had fresh fruit once or twice a year and I was very hungry. (It didn’t occur to me to knock on the door and ask permission). After I ate the 2 peaches I thought if I took some off the tree, they would not mind or even miss them. With another lack of self-control, I put several in the fold of my shirt and made my way home.

I first rationalized the situation to benefit my desires by telling myself that the peaches on the ground were going to go to waste. So many people, like I did, think that if they have a good reason for doing wrong, then it’s O.K. But it is never right to do wrong and never wrong to do right.

There are some things that I have done in my life that I am not proud of, but I have learned from the consequences not to do them again. Having constantly worked on self-control in my life, I have become a stronger person and I know I am still learning from life experiences.

Fair enough, but I think Shun is a smart play on consumer exception. Most home cook types grow up with/use a German knife, so it's a familiar cutting motion. They go to a store, pick up a Shun, and holy crap it handles just like the knife they used to but it's so light and sharp and sparkly and must have! Which is all well and good except that at a fundamental level combining the German profile with the gyuto's high HRC waif nature is not a sensible way to make a knife for real world conditions. But it is admittedly a brilliant way to move product.
