Okay, so l've lived a good portion of my life in the south east and the other half of it in the north east portion of the US.

Biscuits are fluffy, light, buttery, and should have a slight crispness to the outside portion. Only sweet due to additions of honey or jams.

Scones are dense, more likely to have things baked in, almost always sweet, and if too thin or overcooked become crunchy like a cookie.

Cookies are a dessert, and should not be recommended for breakfast. Can be chewy, crunchy, brittle, doughy, simple, complex, and are so easy to make differently just by adding more or less of any one of the simple ingredients.

Biscotti are the same thing as cantuccini, for the "authentic" italians. Twice baked cookie, usually flavored with almonds and served with coffee. Can be filled with other things/ dipped in chocolate.
