How do I make steak so it's not chewy. Was dealing with a skirt steak today and usually it isn't so bad at restaurants but I tried searing it in a pan and finishing it rare in the oven when it reached 135°F internally the oven was at 200 degrees. Unfortunately I always fuck up the searing since I have an induction stovetop which I feel is too hot or not hot enough most of the time. It's a good steak but I don't understand what im doing.
