Who else makes their own stock/bone broth here? I just did my first batch yesterday and it came out gelatinous as fuck which I am happy about. Any tips or experiences?

MY STEAK WIT

•1.5 LBS thin sliced ribeye
•half large white onion
•8oz white mushrooms
•1 large soft roll of cuban bread
•1/3 lbs american white cheese
•1/3 lbs provolone (sharp when applicable)
•kosher salt, coarse pepper
•olive oil for onions/mushrooms

In a large skillet or enameled dutch oven, heat 1tbsp olive oil over med-high heat. Im batches, and at room temp, sprinkle salt and pepper over some ribeye and sear it in dutch oven bottom in one layer, turn and then place in aluminum to rest, reserving drippings. Repeat until all steak is cooked. Should take 45-60sec per side or less even.

Reduce heat to medium or bit lower if too hot.

Add 1-2 tbsp olive oil to pan. Add onion(chopped into strips) and mushroom(coarsely sliced) to pan, covering delicious fond. Mushrooms should release their liquid which you can uae to deglaze pan, collecting delicious meat flavor. Once sauteed for about 10 min. Reintroduce steak to pan and mix together to warm.

In seperate large shallow skillet, place steak/onion/mush into pan over low-med heat. Place even amounts of provolone and american over top. Once beginning to melt a bit, use tongs to toss the mixture all together which will eventually even out in perfect cheesy steakings.

Optionally gut bread and fill with mixture. Don't overload or skimp. Just enough to fill it up and easily handle into your face.

Focusing on the simplicity of this sandwich is what makes it perfect.

I'm going on a little Amazon food spree. I've been buying lots of hot sauces recently and I want to try more that I cannot find in local stores. I already have several types of Cholula (my fav all purpose), Tapatio, Vark (testing the meme, it's not bad), and I am ordering some Crystal, Marie Sharp's, and some MSG seasoning.
What other little odds and ends should I try? Any other all-purpose seasonings or sauces? I like seasonings and sauces.

•Fresh chicken bought same day
•1c flour
•1tbsp baking powder
•1tsp baking soda
•1 egg, whisked with splash of milk
•salt, pepper
•1tsp paprika
•1tsp cayenne pepper
•1/2tsp msg (optional)
•grated cheddar
•Romaine, chopped into slivers
•peanut oil
•large tortilla or sundried tomato wrap
•red onion, sliced thin strips
•caesar or ranch if normie

SAUCE:
•1/4 cup melted butter
•1/3 cup cayenne pepper sauce
•3 cloves garlic, minced

Over low heat, cook garlic in butter, covered, in small saucepan. Once softened, stir in cayenne sauce and set aside, stir occasionally.

Cover bottom of oil safe pan with peanut oil and set to medium. Meanwhile, mix all dry ingredients into flour. Pound chicken breast until 1/2 inch thick or less. Cut into strips.
When oil is shimmering, dunk strips into egg wash, then into flour. Coat generously. Shake excess and place in pan, fill pan 3/4 of way and work in batches if neccesary, turning when golden brown. Place finished strips on paper towel.

With a mesh strainer over pot of boiling water, steam your wrap or tortilla for optimal hydration/stretch.
Toss romaine, cheese, red onion and caesar together. Toss chicken in buffalo sauce you created. Optional, cut strips into bites.

Buffalo chicken caesar wrap complete. It may seem off to you at first to combine these things, but its a glorious combo.
