So by your definition every Ahi steak I've ever eaten was technically a fillet? That's not how anybody defines a steak. You know fish have different muscle groups, and in a lot of larger fish they often cut the steaks from just one of the muscle groups, which is why your ahi steaks tend to be triangular despite the fact that ahi tend to generally be oval shaped.
