Mic it for 90 seconds, throw it on the grill for 15 sec/side. Mic it and mark it.

Mid-90s, was a GM for a now-mostly-defunct casual restaurant. Got flown out to Detroit suburbs to clean up a unit that had been closed by the health department. Deli slicer sharpening wheel was infested with maggots. Desiccated and rotten chicken in the cooler/freezer. Hoods hadn't been done in years, coated with 2-3 inches of grease. Flat-top burners were ~75pct clogged with all kinds of nasty shit. All kinds of build up in the dish machine. Temp maxed at about 125. Bar was just nasty. Beer taps had yeast caked on the spouts. Mold all over the floor. Oddly enough, no bug problem.

That shit took ~20 people a week to clean. Reopened to a full house. Weird.

when i was little i would put it on everything just to see if it would taste good. obviously it wasn't always good (gummi bears and mustard dont pair well), but i was always able to down it without gagging. when i got older i would still pile it onto things where you typically use it (hot dogs, french fries, etc.). i used to gross out my uni roommate by eating a tablespoon of it, because he would gag at even the smell of mustard.

i moved to europe and they don't have it here. what they do have is a bit paler, thicker and sharper, much more like dijon although i wouldn't call it that.
