/ck/ I have a question. If I am braising a tough cut of meat, in this case lamb neck curry, and it's been simmering on the stove for ~2hours but is not quite tender enough yet, is there any reason to not add more water and continue boiling? If that liquid then reduces and the meat is still not tender enough, can I just keep adding more water and reducing it then adding more water until it is sufficiently tender?

I can't see why this would affect the taste as you are diluting a highly concentrated mix of spices then evaporating liquid and arriving where you were 30 minutes ago, but your meat is more tender.
