Ok, here's how you do your NY Strip:

1) DO NOT marinade it unless it's a nasty piece of meat.

2) Bring it to room temp before grilling. Appx. 1 hour before you're gonna cook it, take it out of the fridge and salt both sides. NOTE I did NOT say pepper - that goes on AFTER you cook it.
3) PREHEAT your grill on it's HIGHEST setting for appx 1/2 hour before you are going to cook to get those grates nice and hot.
4) Slap that meat on the grill and DO NOT TOUCH IT for appx. 2-3 mins, then flip it ONCE, and DO NOT TOUCH IT for appx. 2-3 mins.
4a) The time depends on the thickness, but figure it's about 2 mins per inch of thickness. Learn the touch test to be sure (rare is the same softess as the flesh between your thumb and forefinger, Med is base of your thumb, Well is your wrist).
5) Take it off the grill and LET IT REST for appx. 7-10 mins. You can add pepper now (and if you're fancy, some herb butter, too).
6) Eat that fucker!
