I find chili peppers more astounding desu

You could generalize this to nightshade I suppose, but it's just crazy to me that Chinese recipes that are considered "ancient" were not created until after Columbus explored the Americas.

Making your own hot sauce, do you go for fermented or un-fermented?

I want mine to keep in the fridge for several months, so I must go with a fermented sauce, right?
