I love animals and would like, cuddle a cow, but it's not healthy to cultivate such a level of sensitivity that you can't stand the thought of an animal you've never seen being killed that you change your diet for it. A certain degree of callousness is needed to thrive.

you can make a gravy out of any liquid that has flavor. Vegetable stock can work.

Whatever you thicken the stock with will change the flavor a slight bit.

What are you going to thicken the stock with ?
Roux ? Cornstarch ?
