how much does overnight proofing/fermenting/whatever help for texture and crumb? or is it mostly for flavor?

I ask because I wanna do the whole process in a day if possible. if I feed my. starter the night before so it's ready to go in the morning, can I do everything in a day? (like starting 7AM ending 9PM) or will the quality really suffer?

every recipe I find is overnight it seems like

i have rice, parmigiano reggiano, a few cloves of garlic, linguine, chicken thigh, cheddar cheese, broccoli, carrots, butter, gherkins, bread, strawberry jam, olive oil, frozen peas, ketchup, mayo and cheerios. what the fuck do I cook

I just hate how she acts like her job is the hardest thing in the fucking world.

She lives in fucking New York, and works in a fucking beautiful test kitchen with an amazing view. All she does all day is bake fucking snacks and makes candy, but she acts like you shot her dog if you ask her to temper chocolate.

I fully admit I'm incredibly jealous of her lifestyle, and her acting like she's living in hell makes me hate her.
