Does she like to play russian roulette too? Non-acidic vegetables and meats must be canned using a pressure canner period, but even acidic vegetables and pickles have to be canned with a water bath to seal the jar.

Seriously, ask her where she got the idea inversion canning was safe for anything since it doesn't remove the air and seal the lid.

Toss it w/o even opening, that shit is potentially deadly.

Probably my homecanned salmon. Everyone is paranoid to eat it although I followed the AK university guidelines for canning smoked salmon. Tastes goat af, too, so they're missing out on a treat.

I can meat, stocks and fish but I use a pressure cooker following USDA guidelines. My gut says it should be OK since you have to pressure can any non acidic vegetable similar to how you can meat. So creating a vinegar pickle brine seems like it might work for meat as well. Having said that, I think you really need to contact the USDA or your state uni to find out for sure.

Get really fresh sardines, brine them for an hour and pack vertically into pint canning jars. Place in pressure canner and process @10lbs of pressure (15lbs if above 1000ft. elevation) for 110 minutes. I canned some salmon that I smoked following the University of Alaska jnstructions and it was really good.

I can smoked salmon and cure belly and back bacon. I also make sausages but I've never thought of canning them or any other meat really. I do can homemade stocks though.

I was getting bored with typical canned fish so I canned some fresh wildcaught salmon after brining and smoking at a relatively low temp. It's the best canned fish I've ever eaten. Highly recommend it if you feel enterprising. It's a PDF, but if you google "university of alaska canning smoked salmon" the instructions show as the first result.

We canned @ 50 qts of tomatoes this year. I canned some smoked salmon this year again. We generally blanch and freeze our corn, green beans and peas. Root veg and squashes we just store in cool dark areas. Since the temp has dropped into the 40's we've been making venison snd chicken stock on our wood burning stove and canning that pretty much daily. I've posted this pic before but it's the smoked salmon and stock.

Yeah, I smoke and can wild caught sockeye salmon when it's in season and it's the best canned fish I ever had. I do stock too, it's behind the salmon.

As someone who pressure cans, my worshipful fallen angel, you prepare the stew by going through all the steps you normally would when making a stew. Brown your meat, saute your aromatics, add spices and herbs and other vegetables and wine/stock heat to a boil and ladle into jars. Don't just dump raw stuff into the jars.

Smart man. In July when I can get really fresh wild caught salmon I always smoke it and can up a bunch. I can my homemade stocks too. Wish I could get really fresh clams, I'd follow your lead on that, too.

I can even meat products (pic related, stock and salmon) and cure my own meat. But I do it so I can comfortably offer it to guests without wondering if I'll kill them. And it's not hard to do. Some things are very stupid to play russian roulette with. If you like senseless gambling, go ahead. The human race already has a large amount of DNA that's expendable.
