If you're really having issues a week out from roast, they're way more developed than a "medium". Like I said I try not to touch my roasts for a month if I can help it/don't run out of other stuff. I have no problems, I enjoy the coffee more after 4 weeks than 1.

You need to get into the habit of freezing your beans. When I sample one of my roasts thats great, I just pull at least half the jar out to vac and freeze for a rainy day stash.

And with that extra cash in your pocket you get to splurge on more expensive roasts whenever you want to evaluate yourself against something nice.

Just for another example, I paid $37.75 for 5lbs of Finca Monteblanco Purple Caturra natural in 2019. Still have a little bit stashed back since I was buying 5 to 20lbs of stuff at a time back then. A local roaster currently has the same crop from last year. $29.50usd/12oz. Fuck that. Your aussie market is obviously going to be different, but even IF you're paying a similar price for your greens(you won't), your selection just skyrockets. You're already paying top dollar for shit you don't like. You'll break even in under a month. They don't sell an aussie plug one though. You guys are 220v right? So you'll need a stepdown to 110v.

q2 is the starting line. Don't buy the normcore or wacaco. Everything else will be one of two burrs, sometimes scaled up or down. Kinu, 1zpresso J, Kingrinder k3 and k4 will all be a similar burr. Comandante, 1zpresso q2 x-pro and K, and kin k5 k6 will share a similar burr. Kinu is more espresso focused while the comandante is "cleaner" for filter, but any of those grinders will outperform the encore and zwilling for any brew method. Spending more generally gets you better build quality, tolerances, and smaller step sizes.
